Watermelon Fruit Salad
Serves 6
Everyone wants to get their hands on this desert or is it breakfast, or a snack – or all 3?
1/4 watermelon (2kg)
125g blueberries
125g blackberries
6 cherries
1 lemon, juice and zest
1 tsp honey
A few sprigs of mint, roughly sliced
- Chop watermelon into chunky cubes – not being too perfect and place on a platter
- Wash berries and scatter over and around the watermelon
- Slice the cherries in half, remove the seed and scatter over the watermelon
- Make a honey and lemon juice drizzle by mixing both in a small bowl then pour over the fruit
- Top with lemon zest and mint
- Serve as is, or it’s absolutely delicious with cashew cream or yogurt
